I've confirmed that this is also not instance specific as I can replicate the same action across both the local instance and a remote one.

All you need to do to replicate is leave a reaction.

A bit of a strange one. When someone leaves a reaction on an old MFM of mine, it moves some of the elements around. From a quick look into what is happening, it seems that it's redrawing the content of the post and removing some of the katex. I've confirmed that this is also not instance specific as I can replicate the same action across both the local instance and a remote one.
